Mung Bean & Rice Porridge

Ingredients
- ·1/3 cup whole or split mung beans
- ·2/3 cup white or brown basmati rice
- ·1 cup coconut milk
- ·3 cups water
- ·Pinch of salt
Method
- 01Soak the mung beans 8–12 hours.
- 02Cook rice and mung with water until very soft.
- 03Stir in coconut milk and salt; bring back to a gentle boil, stirring continuously.
- 04Adjust consistency — more hot water for a thinner porridge; simmer longer to thicken.
