Spiced Ghee Rice

Soft basmati rice cooked in ghee with whole spices — the gentlest carbohydrate in Ayurvedic kitchens. Excellent for convalescence, post-illness, and depleted Vata.

Pacifies Vata; sattvic comfort food

Ingredients

  • ·1 cup basmati rice, rinsed and soaked 20 min
  • ·1 tbsp ghee
  • ·4 cloves · 2 green cardamom · 1 bay leaf
  • ·1-inch cinnamon stick
  • ·2 cups water · pinch of pink salt

Method

  1. 01Warm ghee in a pan; add cloves, cardamom, cinnamon, bay leaf — toast 30 seconds.
  2. 02Add drained rice; coat in ghee for 1 minute.
  3. 03Add water and salt; bring to a boil.
  4. 04Reduce to lowest heat, cover, cook 12 minutes. Rest off heat 5 minutes.
  5. 05Fluff gently. Serve with extra ghee and stewed apple or moong dal.
